Rainbow Veggie Pizza 

Ingredients:

  • 1/2 cup red and orange cherry tomatoes 
  • 1/2 yellow pepper diced 
  • 1/2 cup broccoli 3/4 red onion diced 
  • 1/2 cup shredded mozzarella 
  • 1/2 cup Parmesan cheese 
  • Olive Oil 
  • Salt and Pepper 

Pre Heat Oven to 425.

On baking sheet place all veggies. Drizzle with olive oil, salt and pepper and roast for 25 minutes. Set aside. 

Bake Cauliflower Crust according to package. Remove and dress pizza. Brush with olive oil first, then add mozzarella, Parmesan, salt and pepper. Then place the veggies in a circular pattern starting with red tomatoes, orange tomatoes, yellow pepper, broccoli and red onion. 

Place back in the oven and bake at 350 for 20 minutes. Cool and serve.
